Pickled Pineapple

What?  Pickled pineapple?  Cucumbers are pickled, not pineapple.

That is what I thought, "pickled pineapple... ewww."

But since I have all this pineapple, I thought, "why not?
 Just make a few."   Well, it turns out a few is not enough.  These things are delicious!  I should have made more.  They have this interesting combination of sweet and sour with just a hint of spice.  Yum.

Pickled Pineapple
makes 5 pints

3 Pineapples
1 1/2 cups Pineapple Juice
1 1/2 cups Vinegar
1 1/2 cups Sugar
1 1/2 cups Brown Sugar
1/4-1/2 teaspoon Cinnamon
dash Nutmeg
